- Combine graham cracker crumbs and granulated sugar in a bowl. Pour in melted butter and mix until combined.
- Press the crumb mixture evenly into the bottom of the springform pan.
- In a large bowl, beat the cream cheese with an electric mixer until smooth.
- Add powdered sugar and vanilla extract to the cream cheese and beat until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until just combined.
- Spread the filling evenly over the crust in the springform pan.
- Refrigerate for at least 4 hours, or until firm.
Notes
Serve chilled. You can top with fruit or a fruit sauce if desired.
