Ingredients
  

For the Main Course
  • 1 kg beef roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 garlic cloves minced
  • 1 tbsp rosemary chopped
For the Side Dish
  • 500 g potatoes quartered
  • 2 tbsp butter melted
  • 1 tsp salt
  • 1 tsp paprika

Method
 

  1. Preheat the oven to 180°C (350°F).
  2. Rub the beef roast with olive oil, salt, pepper, minced garlic, and rosemary.
  3. Place the roast in a baking dish and cook for 1 hour or until the internal temperature reaches 60°C (140°F) for medium-rare.
  4. Toss the potatoes with melted butter, salt, and paprika.
  5. Add the potatoes to the baking dish around the roast and cook for the remaining time.
  6. Let the roast rest for 10 minutes before slicing.
