Ingredients
  

For the Main Course
  • 2 lbs beef tenderloin trimmed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
For the Side Dish
  • 1 lb asparagus trimmed
  • 2 tbsp butter
  • 1 clove garlic minced

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, salt, and pepper.
  3. Place the beef in a roasting pan and cook for 30-40 minutes for medium-rare.
  4. While the beef cooks, melt butter in a skillet over medium heat.
  5. Add garlic and asparagus, sauté for 5-7 minutes until tender.
  6. Let the beef rest for 10 minutes before slicing.
  7. Serve the beef with the asparagus on the side.
