Ingredients
  

For the Main Course
  • 1 kg beef tenderloin trimmed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
For the Side Dish
  • 500 g potatoes peeled and cubed
  • 2 tbsp butter
  • 1 tsp rosemary chopped

Method
 

  1. Preheat the oven to 200°C (400°F).
  2. Rub the beef tenderloin with olive oil, salt, and pepper.
  3. Place the beef in a baking dish and roast for 45 minutes for medium-rare.
  4. While the beef cooks, boil the potatoes until tender, then drain.
  5. Mash the potatoes with butter and rosemary.
  6. Let the beef rest for 10 minutes before slicing.
  7. Serve the beef with the mashed potatoes.
