Ingredients
  

For the Main Course
  • 4 salmon fillets skin-on
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
For the Side Dish
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 tbsp butter

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Season the salmon fillets with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear the salmon skin-side down for 3 minutes.
  4. Transfer the skillet to the oven and bake for 10 minutes.
  5. In a saucepan, bring water to a boil. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  6. Fluff the quinoa with a fork and stir in butter.
