Ingredients
  

For the Main Dish
  • 1 whole ham bone-in
  • 2 cups collard greens chopped
  • 1 cup black-eyed peas dried
For the Cornbread
  • 1 cup cornmeal
  • 1 cup flour
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1 cup milk
  • 1 egg egg
  • 1/4 cup vegetable oil

Method
 

  1. Soak the black-eyed peas in water overnight. Drain before cooking.
  2. Place the ham in a large pot and cover with water. Simmer for 1 hour.
  3. Add the collard greens and black-eyed peas to the pot. Simmer for another hour.
  4. Preheat the oven to 400°F (200°C). Mix the cornmeal, flour, sugar, and baking powder in a bowl.
  5. Add the milk, egg, and vegetable oil to the dry ingredients. Stir until combined.
  6. Pour the batter into a greased baking dish. Bake for 20-25 minutes.
