- Place the black-eyed peas, water, and ham hock in a large pot.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the onion, garlic, salt, and pepper. Continue simmering for another 30 minutes or until peas are tender.
- Remove the ham hock, shred the meat, and return it to the pot.
- Serve hot with cornbread or rice.
