Method
- Place the black-eyed peas, ham hock, onion, garlic, and water in a large pot.
- Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until peas are tender.
- Remove the ham hock and shred the meat. Return the meat to the pot.
- Stir in salt and pepper. Simmer for 10 more minutes.
- Serve warm with cornbread or rice.

For extra flavor, add a bay leaf while simmering. You can also substitute smoked turkey for the ham hock.
