  • 1 lb dried black-eyed peas soaked overnight
  • 6 cups water
  • 1 ham hock
Seasonings
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf

Method
 

  1. Drain the soaked black-eyed peas and rinse them under cold water.
  2. In a large pot, combine the peas, water, and ham hock.
  3. Bring to a boil, then reduce heat to a simmer.
  4. Add salt, pepper, and bay leaf.
  5. Simmer uncovered for 1 hour or until peas are tender.
  6. Remove ham hock before serving.
