Ingredients
  

For the French Toast
  • 4 slices bread thick-cut
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 tbsp butter for cooking
For the Berry Topping
  • 1 cup mixed berries fresh or frozen
  • 1 tbsp maple syrup optional

Method
 

  1. In a mixing bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
  2. Dip each bread slice into the egg mixture, coating both sides evenly.
  3. Heat butter in a skillet over medium heat. Cook the soaked bread slices until golden brown on both sides, about 3-4 minutes per side.
  4. While the French toast cooks, warm the mixed berries in a small saucepan or microwave until softened, about 2-3 minutes.
  5. Serve the French toast topped with the warm mixed berries and drizzle with maple syrup if desired.

Notes
