Ingredients
  

For the Brussels Sprouts
  • 1 lb Brussels sprouts trimmed and halved
  • 3 tbsp Olive oil
  • 2 tbsp White miso paste
  • 2 tbsp Maple syrup
  • 1 tbsp Rice vinegar
  • 1/2 tsp Black pepper freshly ground
For the Topping
  • 4 slices Bacon cooked and crumbled

Equipment

  • Baking sheet
  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the olive oil, miso paste, maple syrup, rice vinegar, and black pepper until smooth.
  3. Add the Brussels sprouts to the bowl and toss to coat them evenly with the glaze.
  4. Spread the glazed Brussels sprouts in a single layer on the prepared baking sheet.
  5. Roast for 20-25 minutes, or until the Brussels sprouts are tender and slightly caramelized, flipping them halfway through.
  6. Remove from the oven, transfer to a serving dish, and top with the crumbled bacon before serving.

Notes

You can adjust the amount of maple syrup to your preference for sweetness.
