Ingredients
  

For the Dough
  • 2.5 cups all-purpose flour
  • 1 tsp salt
  • 1 cup unsalted butter cold and cubed
  • 6 tbsp ice water
For the Filling
  • 1 cup fruit jam any flavor
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
For the Egg Wash
  • 1 egg beaten
  • 1 tbsp water

Method
 

  1. In a large bowl, mix flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  3. In a small bowl, mix jam, lemon juice, and cornstarch to make the filling.
  4. Preheat oven to 375°F (190°C). Roll out the dough to 1/8-inch thickness and cut into 12 circles.
  5. Place a spoonful of filling in the center of each circle. Fold over and crimp the edges with a fork.
  6. Brush each pie with egg wash. Bake for 18-20 minutes or until golden brown.
  7. Let cool slightly before serving.

Use any jam flavor you prefer. For a savory version, replace jam with cheese and herbs.
