Ingredients
  

For the Custard
  • 2 cups whole milk
  • 3 large eggs
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Method
 

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, whisk together the eggs, sugar, vanilla extract, and salt until smooth.
  3. Heat the milk in a saucepan until warm but not boiling. Slowly pour the warm milk into the egg mixture while whisking continuously.
  4. Strain the custard mixture through a fine sieve to remove any lumps.
  5. Divide the custard evenly among 6 ramekins or small cups.
  6. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake for 25 minutes or until the custard is set but still slightly jiggly in the center.
  8. Remove from the oven and let cool. Serve chilled.

Notes

For a richer custard, substitute half the milk with heavy cream. Top with fresh berries or a sprinkle of cinnamon before serving.
