Mediterranean Chicken Orzo

Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken thighs cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Orzo
  • 1 cup orzo pasta uncooked
  • 2 cups chicken broth
  • 1 cup cherry tomatoes halved
  • 1/2 cup kalamata olives pitted and sliced
  • 1/4 cup feta cheese crumbled
  • 2 tbsp fresh parsley chopped

Equipment

  • Wooden spoon

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken, oregano, garlic powder, salt, and pepper. Cook until browned, about 5 minutes.
  2. Stir in orzo and cook for 1 minute, stirring constantly.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes.
  4. Add cherry tomatoes and olives, then cover and cook for another 5 minutes or until orzo is tender.
  5. Remove from heat and sprinkle with feta cheese and parsley before serving.

Notes

For extra flavor, add a squeeze of lemon juice before serving. You can also substitute chicken with shrimp for a seafood variation.
