Ingredients
  

For the Salad
  • 4 cups mixed greens such as spinach, arugula, or lettuce
  • 1 cup radishes thinly sliced
  • 1 cup asparagus trimmed and chopped
  • 1/2 cup peas fresh or thawed
  • 1/4 cup fresh herbs such as mint or parsley
For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Wash and dry all vegetables and herbs.
  2. Chop the radishes, asparagus, and herbs.
  3. In a large bowl, combine the mixed greens, radishes, asparagus, peas, and herbs.
  4. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
  5. Drizzle the dressing over the salad and toss gently to coat.
  6. Serve immediately.
