Ingredients
  

For the Hash
  • 2 medium sweet potatoes peeled and diced
  • 1 medium red onion chopped
  • 1 red bell pepper chopped
  • 1/2 cup pecans chopped
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced sweet potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until tender and slightly browned.
  3. Add chopped red onion and red bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are softened.
  4. Stir in chopped pecans, maple syrup, cinnamon, salt, and pepper. Cook for an additional 2-3 minutes, stirring to coat everything evenly.
  5. Serve the hash hot.

Notes

You can add a fried or poached egg on top for a complete meal.
