- Heat a large pot over medium heat. Add the onion and cook until softened.
- Add the garlic, ginger, curry powder, turmeric, and cumin. Stir for 1 minute.
- Add the lentils, sweet potatoes, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes, or until lentils and sweet potatoes are tender.
- Stir in the coconut milk and season with salt and pepper.
- Simmer for another 5 minutes before serving.
