Ingredients
  

For the Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
For the Filling
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 2 tbsp lemon zest
  • 1/4 cup lemon juice freshly squeezed
  • 2 tbsp poppy seeds
  • 2 large eggs

Method
 

  1. Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  2. In a bowl, mix the flour, sugar, and melted butter for the crust until combined. Press the mixture into the prepared pan.
  3. Bake the crust for 15 minutes, or until lightly golden. Remove from the oven and let cool slightly.
  4. In another bowl, whisk together the sugar, flour, lemon zest, lemon juice, poppy seeds, and eggs for the filling until smooth.
  5. Pour the filling over the baked crust. Return to the oven and bake for 25 minutes, or until the filling is set.
  6. Let the bars cool completely before cutting into squares.
