- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine ground turkey, egg, breadcrumbs, lemon zest, parsley, oregano, salt, and pepper. Mix until well combined.
- Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake for 18-20 minutes, or until the meatballs are cooked through.
- While the meatballs bake, heat olive oil in a skillet over medium heat. Add green beans, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until tender.
- Serve the meatballs with green beans.
