Lemon Garlic Herb Salmon and Veggies

Ingredients
  

For the Salmon
  • 4 salmon fillets skin-on or skinless
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Veggies
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes halved
  • 1 zucchini sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix olive oil, garlic, lemon zest, lemon juice, thyme, oregano, salt, and pepper. Coat the salmon fillets with the mixture.
  3. Place the salmon on one side of the baking sheet. Toss the broccoli, cherry tomatoes, and zucchini with olive oil, salt, and pepper. Spread them on the other side of the baking sheet.
  4. Bake for 18-20 minutes, or until the salmon is cooked through and the veggies are tender.
  5. Serve immediately with extra lemon wedges if desired.
