Method
- Whisk eggs and milk together in a bowl. Season with salt and pepper.
- Melt butter in a skillet over medium heat. Pour in the egg mixture.
- Cook, stirring gently, until eggs are set but still moist. Stir in cheese, sausage or bacon, and optional vegetables.
- Warm tortillas in a dry skillet or microwave until pliable.
- Spoon the egg mixture onto the center of each tortilla. Fold in the sides, then roll up tightly to form burritos.
Notes
Serve immediately or wrap in foil for on-the-go. You can add salsa or sour cream for extra flavor.
