Ingredients

For the Skewers
  • 1 package halloumi cheese cut into 1-inch cubes
  • 2 ripe peaches pitted and cut into 1-inch wedges
For the Hot Honey Glaze
  • 1/4 cup honey
  • 1 tbsp red pepper flakes or to taste
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Equipment

  • Grill
  • Skewers
  • Small saucepan
  • Basting brush

Method

  1. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Thread the halloumi cubes and peach wedges alternately onto the skewers.
  3. In a small saucepan, combine the honey and red pepper flakes. Heat gently over low heat until the honey is warm and the flakes have infused. Stir in the olive oil, lemon juice, salt, and pepper. Set aside.
  4. Grill the skewers for 3-5 minutes per side, or until the halloumi is golden brown and slightly softened, and the peaches have grill marks and are tender.
  5. During the last minute of grilling, brush the skewers generously with the hot honey glaze.
  6. Remove skewers from the grill and serve immediately.

Notes

You can adjust the amount of red pepper flakes in the glaze to control the level of heat. Serve as a appetizer or alongside grilled chicken or fish.
