Ingredients
  

For the Salmon
  • 4 salmon fillets skin-on or skinless
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp minced garlic
  • 1 tsp minced ginger
For the Vegetables
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, garlic, and ginger.
  3. Place salmon fillets on one side of the sheet pan. Brush half of the honey soy glaze over the salmon.
  4. On the other side of the sheet pan, toss broccoli and bell pepper with olive oil, salt, and pepper.
  5. Bake for 12-15 minutes, until salmon is cooked through and vegetables are tender.
  6. Brush remaining glaze over salmon before serving.
