Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Couscous
  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 2 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces and season with thyme, rosemary, salt, and pepper. Cook until the chicken is browned and cooked through, about 8-10 minutes.
  2. While the chicken cooks, bring the chicken broth to a boil in a small saucepan. Remove from heat and stir in the couscous. Cover and let sit for 5 minutes.
  3. Fluff the couscous with a fork and mix in the chopped parsley.
  4. Serve the herbed chicken over the couscous.
