- Preheat the oven to 375°F (190°C).
- In a bowl, mix chicken thighs with olive oil, Italian herbs, salt, and pepper until evenly coated.
- Place the chicken in a baking dish and roast for 30 minutes.
- In a small bowl, combine minced garlic, Parmesan cheese, and parsley.
- Sprinkle the garlic Parmesan mixture over the chicken and roast for another 15 minutes, or until the chicken is fully cooked.
