Hearty Chickpea and Vegetable Soup

Ingredients
  

For the Soup
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 4 cups vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh spinach
  • salt and pepper to taste

Equipment

  • Large pot
  • Wooden spoon

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic, cumin, and paprika. Cook for 1 minute until fragrant.
  4. Pour in vegetable broth, chickpeas, and diced tomatoes. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add spinach and cook for 2 minutes until wilted.
  7. Season with salt and pepper to taste.
