Ingredients
  

For the Salad
  • 2 cups mixed greens
  • 1 avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
For the Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Wash and dry the mixed greens, cherry tomatoes, and red onion.
  2. Dice the avocado and halve the cherry tomatoes.
  3. Thinly slice the red onion.
  4. Combine all salad ingredients in a large bowl.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make the dressing.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Divide the salad into two containers for easy packing.
