  • 4 large eggs
  • 1 tbsp olive oil
  • salt and pepper to taste
For the Vegetables
  • 1/2 cup chopped spinach
  • 1/4 cup diced tomatoes
  • 1/4 cup diced bell peppers

Method
 

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add diced bell peppers and sauté for 2 minutes until slightly softened.
  3. Add chopped spinach and diced tomatoes, cooking for another 1-2 minutes.
  4. Crack the eggs into a mixing bowl, whisk lightly, and pour over the vegetables.
  5. Season with salt and pepper, then cook for 3-4 minutes, stirring occasionally, until eggs are fully set.
  6. Serve hot.
