Ingredients
  

Egg Muffin Cups
  • 6 eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese
  • 1/4 cup diced vegetables e.g., bell peppers, spinach
Yogurt Parfait Jars
  • 2 cups Greek yogurt
  • 1 cup granola
  • 1/2 cup mixed berries
Avocado Toast Trio
  • 3 slices whole grain bread
  • 1 avocado mashed
  • salt and pepper to taste
3-Ingredient Pancakes
  • 1 banana ripe
  • 2 eggs
  • 1/4 cup oat flour
Veggie Scramble
  • 4 eggs
  • 1/2 cup diced vegetables e.g., tomatoes, spinach, mushrooms
  • 1/4 cup shredded cheese

Method
 

  1. Preheat the oven to 375°F (190°C) for the egg muffin cups.
  2. Whisk together eggs, milk, cheese, and vegetables for the egg muffin cups. Pour into a greased muffin tin and bake for 15-20 minutes.
  3. Layer Greek yogurt, granola, and berries in small jars for the yogurt parfaits.
  4. Toast the bread and spread mashed avocado on top. Season with salt and pepper for the avocado toast.
  5. Mash the banana and mix with eggs and oat flour for the pancakes. Cook on a greased skillet over medium heat until golden.
  6. Scramble the eggs with diced vegetables and cheese in a skillet for the veggie scramble.

Notes

These recipes can be prepared ahead and stored in the fridge for quick breakfasts throughout the week.
