Ingredients
  

For the Salmon
  • 2 fillets salmon skin-on
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Salad
  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber sliced
  • 1/4 cup red onion thinly sliced
  • 2 tbsp lemon juice
  • 1 tbsp olive oil

Equipment

  • Grill or grill pan
  • Mixing bowl

Method
 

  1. Preheat the grill or grill pan to medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
  3. Grill the salmon for 4-5 minutes per side, until cooked through.
  4. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  5. Drizzle with lemon juice and olive oil, then toss to coat.
  6. Divide the salad between plates and top with grilled salmon.
