Ingredients
  

For the Marinade
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Skewers
  • 1 lb chicken breast cut into 1-inch cubes
  • 1 red bell pepper cut into chunks
  • 1 yellow bell pepper cut into chunks
  • 1 red onion cut into chunks
  • 1 cup cherry tomatoes

Method
 

  1. In a bowl, whisk together olive oil, lemon juice, garlic powder, oregano, salt, and pepper to make the marinade.
  2. Add chicken cubes to the marinade and toss to coat. Let marinate for at least 30 minutes.
  3. Thread marinated chicken, bell peppers, red onion, and cherry tomatoes onto skewers.
  4. Preheat grill to medium-high heat. Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through.
