Ingredients
  

For the Potatoes
  • 1.5 lbs baby potatoes halved
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh parsley chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved potatoes with olive oil, minced garlic, salt, and black pepper.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 30 minutes, flipping halfway through, until golden and crispy.
  5. Sprinkle with fresh parsley before serving.
