For the Shrimp
  • 12 oz shrimp peeled and deveined
  • 2 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tbsp olive oil
For the Rice Bowl
  • 2 cups cooked rice
  • 1 cup bell peppers sliced
  • 1 cup cucumber diced
  • 1 tbsp cilantro chopped

Method
 

  1. In a bowl, mix shrimp with lime juice, garlic, and olive oil. Let marinate for 10 minutes.
  2. Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink.
  3. Divide rice between two bowls. Top with shrimp, bell peppers, cucumber, and cilantro.
