- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the potatoes, carrots, olive oil, garlic, thyme, rosemary, salt, and black pepper. Toss until evenly coated.
- Spread the vegetables in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, stirring once halfway through, until the vegetables are tender and golden brown.
- Serve warm.
