Ingredients
  

For the Peach Filling
  • 6 cups fresh peaches, sliced peeled
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
For the Crisp Topping
  • 1 cup all-purpose flour
  • 1 cup brown sugar packed
  • 1/2 cup old-fashioned oats
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter cold and cubed

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, and vanilla extract. Toss gently to coat, then spread evenly in the baking dish.
  3. In another bowl, mix the flour, brown sugar, oats, and cinnamon. Add the cold butter cubes and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
  4. Sprinkle the crisp topping evenly over the peaches. Bake for 30 minutes or until the topping is golden and the peaches are bubbly.
  5. Let cool slightly before serving. Enjoy warm with ice cream or whipped cream if desired.
