  • 4 cups mixed greens

  • 1 avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. In a large bowl, combine mixed greens, cucumber, avocado, cherry tomatoes, and red onion.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
