- Rinse the sago pearls under cold water. Bring 4 cups of water to a boil in a saucepan. Add the sago pearls and cook for 15 minutes, stirring occasionally, until translucent. Drain and rinse under cold water.
- Blend 1 1/2 mangoes with coconut milk, condensed milk, and vanilla extract until smooth.
- Mix the cooked sago pearls with the mango mixture. Chill in the refrigerator for at least 1 hour.
- Serve in bowls topped with the remaining diced mango.

Notes
For a richer flavor, use full-fat coconut milk. Adjust the sweetness by adding more or less condensed milk.
