Ingredients
  

For the Soup
  • 1 cup dried lentils rinsed and drained
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic. Cook for 5 minutes until softened.
  3. Stir in the lentils, cumin, paprika, salt, and black pepper.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 25 minutes or until lentils are tender.
  6. Serve hot and enjoy.
