- Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Dip each strawberry into the melted chocolate, then place on a parchment-lined baking sheet.
- Refrigerate the strawberries for 10 minutes to set the chocolate.
- Mix graham cracker crumbs and melted butter in a bowl. Press into mini muffin tins to form crusts.
- Beat cream cheese and sugar until smooth. Spoon onto the crusts and refrigerate for 1 hour.
