Ingredients
  

For the Chocolate Dipped Strawberries
  • 12 strawberries washed and dried
  • 1 cup dark chocolate chips
For the Mini Cheesecake Bites
  • 1 cup graham cracker crumbs
  • 2 tbsp butter melted
  • 1 cup cream cheese softened
  • 1/4 cup sugar

Method
 

  1. Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  2. Dip each strawberry into the melted chocolate, then place on a parchment-lined baking sheet.
  3. Refrigerate the strawberries for 10 minutes to set the chocolate.
  4. Mix graham cracker crumbs and melted butter in a bowl. Press into mini muffin tins to form crusts.
  5. Beat cream cheese and sugar until smooth. Spoon onto the crusts and refrigerate for 1 hour.
