Ingredients
  

For the Roasted Vegetables
  • 2 cups mixed vegetables (carrots, broccoli, bell peppers) chopped
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Garlic Bread
  • 4 slices bread
  • 2 tbsp butter softened
  • 1 tsp garlic powder

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Toss the mixed vegetables with olive oil, salt, and black pepper.
  3. Spread the vegetables on a baking sheet and roast for 15 minutes.
  4. Mix butter and garlic powder, then spread on bread slices.
  5. Toast the bread in the oven for 5 minutes.
