Easy Breakfast Ideas

Ingredients
  

Egg Muffin Cups
  • 6 eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese
  • 1/4 cup diced vegetables e.g., bell peppers, spinach
Yogurt Parfait Jars
  • 1 cup Greek yogurt
  • 1/2 cup granola
  • 1/2 cup mixed berries
Avocado Toast Trio
  • 1 avocado mashed
  • 2 slices whole grain bread toasted
  • salt and pepper to taste
3-Ingredient Pancakes
  • 1 banana mashed
  • 2 eggs
  • 1/4 cup oat flour
Veggie Scramble
  • 2 eggs
  • 1/4 cup diced vegetables e.g., mushrooms, tomatoes
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. Whisk eggs and milk together in a bowl. Stir in cheese and vegetables.
  3. Pour mixture into muffin cups. Bake for 20 minutes or until set.
  4. Layer yogurt, granola, and berries in a jar. Repeat layers as desired.
  5. Toast bread and spread mashed avocado on top. Season with salt and pepper.
  6. Mix mashed banana, eggs, and oat flour in a bowl. Cook pancakes on a greased skillet over medium heat until golden.
  7. Heat olive oil in a pan. Add vegetables and sauté until tender. Add eggs and scramble until cooked.

Notes

These recipes can be prepared ahead and stored in the fridge for up to 3 days. Reheat as needed.
