Easy Baked Sweet Potatoes

  • 4 medium sweet potatoes scrubbed clean
  • 1 tbsp olive oil
  • salt to taste

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prick each sweet potato several times with a fork. Rub them with olive oil and sprinkle with salt.
  3. Place the sweet potatoes on the baking sheet. Bake for 45 minutes or until tender when pierced with a fork.
  4. Remove from the oven and let cool slightly before serving.
