Ingredients
  

For the Cookies
  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
For the Icing
  • 2 cups powdered sugar
  • 1.5 tbsp milk
  • 1 tbsp light corn syrup
  • 0.25 tsp vanilla extract
  • food coloring assorted colors

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. Gradually mix in flour until dough forms. Roll dough to 1/4-inch thickness.
  4. Cut into Easter shapes with cookie cutters. Bake for 8-10 minutes until edges are light golden.
  5. Cool cookies completely on wire racks.
  6. For icing, whisk powdered sugar, milk, corn syrup, and vanilla until smooth. Divide into bowls and tint with food coloring.
  7. Decorate cooled cookies with icing. Let dry completely before serving.
