Method
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Pat the cod fillets dry with paper towels. Drizzle with lemon juice and season with salt and pepper.
- In a shallow bowl, mix panko, parmesan, garlic powder, and paprika. Place flour in another bowl and beaten eggs in a third bowl.
- Coat each fillet in flour, then dip in egg, and press into the panko mixture to coat evenly.
- Place fillets on the baking sheet. Bake for 10-12 minutes until golden and fish flakes easily.
