Crispy Lemon Pepper Parmesan Potatoes

These potatoes are crispy on the outside and tender on the inside. The lemon pepper and Parmesan cheese add a savory and zesty flavor.

Ingredients
  

For the Potatoes
  • 2 lbs Yukon Gold potatoes cut into 1-inch cubes
  • 3 tbsp Olive oil
  • 1 tsp Lemon pepper seasoning
  • 1/2 tsp Salt
  • 1/4 cup Grated Parmesan cheese
  • 2 tbsp Fresh parsley chopped, for garnish

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the potato cubes with olive oil, lemon pepper seasoning, and salt until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Roast for 20 minutes.
  5. Remove the baking sheet from the oven and flip the potatoes. Sprinkle the Parmesan cheese over the potatoes.
  6. Return the baking sheet to the oven and roast for another 20 minutes, or until the potatoes are golden brown and crispy.
  7. Garnish with fresh parsley before serving.

Notes

For extra crispy potatoes, ensure they are in a single layer on the baking sheet and do not overcrowd the pan.
