- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the potato cubes with olive oil, lemon pepper seasoning, and salt until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet.
- Roast for 20 minutes.
- Remove the baking sheet from the oven and flip the potatoes. Sprinkle the Parmesan cheese over the potatoes.
- Return the baking sheet to the oven and roast for another 20 minutes, or until the potatoes are golden brown and crispy.
- Garnish with fresh parsley before serving.
Notes
For extra crispy potatoes, ensure they are in a single layer on the baking sheet and do not overcrowd the pan.
