Crispy Harissa Chickpea & Avocado Flatbreads

These flatbreads feature crispy harissa chickpeas and creamy avocado, offering a flavorful and satisfying meal.

Ingredients
  

For the Harissa Chickpeas
  • 1 can (15 oz) chickpeas rinsed and drained
  • 2 tbsp harissa paste adjust to your spice preference
  • 1 tbsp olive oil
  • 1/2 tsp cumin
For the Flatbreads
  • 4 flatbreads store-bought or homemade
  • 1 avocado ripe, sliced or mashed
  • 1/4 cup cilantro fresh, chopped
  • 2 tbsp lime juice fresh

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine the rinsed and drained chickpeas, harissa paste, olive oil, and cumin. Toss to coat the chickpeas evenly.
  3. Spread the coated chickpeas in a single layer on the prepared baking sheet.
  4. Roast for 15-20 minutes, or until the chickpeas are crispy and slightly browned. Shake the pan halfway through roasting.
  5. While the chickpeas are roasting, warm the flatbreads according to package directions or until pliable.
  6. Assemble the flatbreads: spread the sliced or mashed avocado over each flatbread. Top with the crispy harissa chickpeas.
  7. Garnish with fresh chopped cilantro and a squeeze of fresh lime juice.

Notes

For extra flavor, you can add a drizzle of tahini or a sprinkle of feta cheese before serving.
