Creamy Tuscan Salmon Pasta

Ingredients
  

For the Pasta
  • 12 oz penne pasta
For the Sauce
  • 1 tbsp olive oil
  • 4 salmon fillets skinless
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes chopped
  • 2 cups baby spinach
  • 1/2 cup grated parmesan
  • 1 tsp salt
  • 1/2 tsp black pepper

  • Pot

Method
 

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add salmon fillets and cook for 4 minutes per side. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds. Pour in heavy cream and bring to a simmer.
  4. Add sun-dried tomatoes, spinach, parmesan, salt, and pepper. Stir until spinach wilts.
  5. Return the salmon to the skillet and break it into chunks. Add the cooked pasta and toss to coat.
  6. Serve warm with extra parmesan if desired.

Notes

For a lighter version, substitute half-and-half for heavy cream.
