Method
- Preheat the oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add garlic and sauté for 1 minute.
- Add diced tomatoes and cook for 3 minutes. Stir in heavy cream, spinach, Parmesan cheese, salt, and pepper. Simmer for 5 minutes.
- Combine the cooked pasta with the sauce. Transfer to a baking dish.
- Sprinkle mozzarella cheese on top. Bake for 15 minutes or until the cheese is melted and bubbly.
