- Melt butter in a large pot over medium heat. Add onion, celery, and garlic. Cook until softened, about 5 minutes.
- Stir in flour and cook for 1 minute. Gradually whisk in chicken broth until smooth.
- Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Add heavy cream, salt, pepper, and thyme. Stir well.
- Add cod and shrimp. Simmer gently until seafood is cooked through, about 8-10 minutes.
- Serve hot with crusty bread.
