Ingredients
  

For the Skillet
  • 1 lb Italian sausage casings removed
  • 4 cups potatoes diced
  • 1 tbsp olive oil
For the Creamy Sauce
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup parsley chopped

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it into small pieces.
  2. Add diced potatoes to the skillet. Cook for 10 minutes, stirring occasionally, until potatoes are tender.
  3. Pour in heavy cream and chicken broth. Stir in garlic powder, salt, and pepper. Simmer for 5 minutes until the sauce thickens.
  4. Garnish with chopped parsley before serving.
