Method
- Season pork chops with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook pork chops for 4-5 minutes per side until browned. Remove from skillet and set aside.
- In the same skillet, melt butter. Add mushrooms and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Stir in thyme and simmer for 3-4 minutes until slightly thickened.
- Return pork chops to the skillet. Spoon sauce over them and cook for 2-3 minutes until heated through.
- Sprinkle with parsley before serving.
